METHOD: Make the buttercream in three or four shades of the same colour; pipe it around the sides of the cake, gradually covering it with lighter and lighter buttercream. Then, smooth out the buttercream by holding a cake spatula steady in one hand while spinning the cake with the other. When you are finished, you will have a gorgeous transition from dark to light.
